Gluten Free Hand Pies

Ingredients:   

For the dough:
1 ¼ cup Cup4Cupä gluten free flour (150g)
1 ¼ cup Hemp Heart Baking Flour (156g)
1 ¾ cup butter, cold (398g)
2 tsp kosher salt (12g)
1 cup water, cold (240g)
2 Tablespoon Granulated Sugar (24g)

   
For the oat streusel:
For the Filling:

4 apples, thinly sliced
½ cup granulated sugar
1 Tablespoon Cinnamon

   
Directions:
  1. Place all flour, salt, & sugar in a bowl.
  2. Grate or cut cold butter into the flour mixture.
  3. Add water.
  4. Mix by hand until flour is incorporated. Work quickly so you do not melt the butter.  You will want small butter chunks to remain in the dough. This is how flakiness & layers form!
  5. Wrap dough in plastic wrap & place in the fridge for at least 1 hour.
  6. You can yield 1 9 inch Pie (bottom & top) or 16 hand pies. Pre heat over to 350 degrees.
  7. After the hour is over, roll the dough out to be ¼ inch thick. Cut into 4x4 inch squares. *See below
  8. Roll each square out until the dough is very thin. The thinner the dough, the flakier & crispier the crust.
  9. Place 4 to 6 apple slices coated in cinnamon sugar onto the dough. Fold the edges.
  10. Brush edges with buttermilk & sprinkle with raw sugar.
  11. Bake for 15 to 20 minutes.
  12. Let cool and drizzle with caramel or icing of your choice.

Substitute the Cup4Cup™ gluten free flour for your favorite gluten free flour!
