Victory Hemp Burger Buns

Ingredients:

Water 2 ¾ cups (680g)

Oil ¼ cup (40g)

Whole Egg 2 Large

Yeast 2 Tbsp. (30g)

Granulated Sugar ½ cup (120g)

Kosher Salt 1 Tbsp. (20g)

Hemp Heart Baking Flour 2/3 cup (160g)

Bread Flour or High Gluten Flour 4 2/3 cup (1040g)


EGGWASH:

Whole Egg 1 egg

Water 2 Tbsp. (30g)

Milk 2 Tbsp. (30g)

Directions:

  1. Begin by grabbing a large bowl, and a whisk.
  2. Using the bowl gathered, measure the water, sugar, and yeast together and begin to mix thoroughly with the whisk.
  3. Let the yeast mixture sit for roughly 3 minutes.
  4. Once the 3 minutes have elapsed, begin to measure the rest of the ingredients into the bowl. It is recommended that you begin with the liquids and mix in the flour. 
  5. When you have accurately measured all the remaining ingredients into the bowl, begin to mix by using your hand and gently but firmly squish the water and flour together. 
  6. Once the dough has been mixed enough to form a shaggy dough, begin to place the dough onto the counter and begin to knead by hand for roughly 5-8 minutes. You are looking for a soft smooth top.
  7. Lightly oil the bowl you used to begin the initial mix and place your dough into the bowl and cover with either a damp tea towel or some plastic wrap. Let your dough sit for 45 minutes to 1 hour, or until your dough has doubled in size.
  8. Once your dough has doubled, grab a small knife or scissors and begin to portion out your dough into 18 (110g) even portions. 
  9. Once you have portioned all of the dough, begin to make the burger bun shape. To do this begin by holding a portion of the dough and folding the dough onto itself until it begins to take a similar shape of a roll. Once you have achieved a similar shape place the seam of the dough ball down onto the work surface and using your hand begin to apply light pressure using the edge of your hand and roll into a circular motion until the shape has been achieved.
  10. Once the dough balls have been made, place them seem of the dough down onto a cookie baking sheet and proof in your oven with the oven light on for roughly 30- 45 minutes. This will create just enough heat to make a perfect proofing chamber and allow your buns to grow into a perfect bun.
  11. After the dough has proofed, remove them from the oven and immediately turn the oven on to 350 degrees. 
  12. When the oven is preheated you will want to egg wash the tops of your buns and place into the oven for 15-20 minutes.

Variations:

After you have egg washed and before you place the buns into the oven you can sprinkle ¼ cup of the following ingredients to make different styles of buns.
