Ingredients:
1 ½ cups V-60 Hemp Heart Protein (191 grams)
½ cup Shredded Coconut (50 grams)
2 cups Peanut Butter (500 grams)
½ cup Pure Maple Syrup (160 grams)
Optional:
1 cup Dark Chocolate, melted
¼ cup Shredded Coconut for topping
Directions:
Place wax paper or parchment paper in an 8x8 baking pan.
In a large bowl, mix all ingredients together until thoroughly combined.
Take the dough ball and press it into the 8x8 lined baking pan until perfectly flat. (Pictured below)
Place the pan, uncovered, in the fridge for 30 minutes to an hour to allow the bars to harden. If it is a warm
day, place the pan in the freezer instead.
Once hardened, turn the pan upside down and the no bake dough with fall out with ease.
Cut into 12 equal portions. (Picture Below)
Melt the dark chocolate and dip only the top of the bars in chocolate for a little added sweetness. Add
shredded coconut for a fun (and delicious) design.
If you prefer to make protein bites instead of protein bars:
Measure each protein bite to be 31 grams. Roll in shredded coconut to prevent sticking. (Pictured below)
Place protein bars or protein bites in the fridge or freezer until ready to consume.
Yields: 12 bars or 24 No Bake Protein Bites
Average weight of each protein bar with no chocolate: 58 grams
Variations:
Substitute your favorite nut butter instead of peanut butter.
Substitute raw honey or agave for maple syrup.
